Ingredients (Serves 2–4)
For the Salad
• 3–4 cups mixed salad greens (spring mix, arugula, or romaine)
• 1 large ripe peach, sliced (or 2 small peaches)
• 1 cup fresh blueberries
• 1/2 cup crumbled feta cheese
• 1/4 cup chopped pecans (or walnuts/almonds)
For the Honey Balsamic Dressing
• 1/4 cup balsamic vinegar
• 1/3 cup olive oil (up to 1/2 cup for a milder vinegar taste)
• 1 tablespoon honey (or maple syrup)
• 1 teaspoon Dijon mustard
• 1/4 teaspoon salt (or to taste)
• 1/4 teaspoon black pepper
Instructions
1. Make the dressing:
