Ingredients (Makes 2 sandwiches)
- 6–8 slices thick-cut bacon
- 2 medium ripe tomatoes, sliced
- Lettuce leaves (optional)
- 4 slices sandwich bread, toasted
- 2–4 tbsp mayonnaise
- Salt, to taste
- Black pepper, to taste
Instructions
- Cook the bacon
Cook bacon in a skillet over medium heat (or bake at 200°C/400°F for 15–20 minutes) until crispy. Drain on paper towels. - Toast and spread
Toast the bread, then spread mayonnaise on one or both sides. - Assemble
Add lettuce (optional), then layer tomato slices. Sprinkle tomatoes with salt and black pepper. Top with crispy bacon. - Serve
Close the sandwich, slice in half, and enjoy immediately.
