Ingredients
β’ 3β4 cucumbers, sliced
β’ 4β5 tomatoes, chopped (or 2 cups cherry tomatoes, halved)
β’ 1 small red onion, thinly sliced
Dressing
β’ 1/3 cup apple cider vinegar (or white vinegar)
β’ 2 tbsp olive oil
β’ 1β2 tbsp water (optional, to soften the vinegar taste)
β’ 1 tbsp lemon juice (optional)
β’ 1β2 tsp sugar or honey (optional, balances tang)
β’ 1 tsp salt (or to taste)
β’ 1/2 tsp black pepper
β’ 1 tsp dried oregano (or Italian seasoning)
β’ 1β2 tbsp chopped parsley (optional)
Instructions
1. Add cucumbers, tomatoes, and onion to a bowl.
2. Whisk all dressing ingredients together.
3. Pour over the veggies and toss well.
4. Chill 15β30 minutes (best flavor) and serve cold.
