
Ingredients (makes 10–12 muffins)
Muffin batter
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon (optional but nice)
- 2 large eggs
- 3/4 cup sugar
- 1 cup milk
- 1/3 cup melted butter (or vegetable oil)
- 2 tsp vanilla extract
Cinnamon-sugar coating
- 1/2 cup melted butter
- 3/4 cup sugar
- 1–1½ tbsp ground cinnamon
Instructions
- Preheat & prep
- Preheat oven to 180°C / 350°F
- Grease a muffin pan well (or use liners, but greasing gives better crust).
- Mix dry ingredients
- In a bowl: flour + baking powder + salt + cinnamon.
- Mix wet ingredients
- In another bowl: eggs + sugar (whisk 30 seconds).
- Add milk + melted butter + vanilla.
- Combine
- Pour wet into dry and mix just until combined (don’t overmix).
- Bake
- Fill muffin cups about 3/4 full.
- Bake 15–18 minutes until golden and a toothpick comes out clean.
- Coat in cinnamon sugar
- Let muffins cool 5 minutes (warm is best for coating).
- Dip each muffin in melted butter.
- Roll in cinnamon sugar until fully coated.
- Optional: coat twice for a thicker crust.
