Cinnamon Sugar French Toast Muffins

Ingredients (makes 10–12 muffins)

Muffin batter

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon (optional but nice)
  • 2 large eggs
  • 3/4 cup sugar
  • 1 cup milk
  • 1/3 cup melted butter (or vegetable oil)
  • 2 tsp vanilla extract

Cinnamon-sugar coating

  • 1/2 cup melted butter
  • 3/4 cup sugar
  • 1–1½ tbsp ground cinnamon

Instructions

  1. Preheat & prep
  • Preheat oven to 180°C / 350°F
  • Grease a muffin pan well (or use liners, but greasing gives better crust).
  1. Mix dry ingredients
  • In a bowl: flour + baking powder + salt + cinnamon.
  1. Mix wet ingredients
  • In another bowl: eggs + sugar (whisk 30 seconds).
  • Add milk + melted butter + vanilla.
  1. Combine
  • Pour wet into dry and mix just until combined (don’t overmix).
  1. Bake
  • Fill muffin cups about 3/4 full.
  • Bake 15–18 minutes until golden and a toothpick comes out clean.
  1. Coat in cinnamon sugar
  • Let muffins cool 5 minutes (warm is best for coating).
  • Dip each muffin in melted butter.
  • Roll in cinnamon sugar until fully coated.
  • Optional: coat twice for a thicker crust.
