Stuffed Pepper Soup Recipe

Ingredients:

  • 1 lb ground beef or ground turkey
  • 1 small onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) tomato sauce
  • 3–4 cups beef broth (adjust for thickness)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt & pepper to taste
  • 1 cup cooked white or brown rice

Instructions:

  1. Brown the meat:
    In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if needed.
  2. Sauté vegetables:
    Add chopped onion, garlic, and bell peppers to the pot. Cook for 5–6 minutes until softened.
  3. Add liquids and seasoning:
    Stir in the diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper.
  4. Simmer:
    Bring to a boil, then reduce heat and let simmer for 25–30 minutes to allow the flavors to blend.
  5. Add rice:
    Stir in the cooked rice just before serving. If you add it too early, it may absorb too much liquid.
  6. Serve hot:
    Garnish with shredded cheese or fresh parsley if desired.
