Stuffed Pepper Soup Recipe
Ingredients:
- 1 lb ground beef or ground turkey
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) tomato sauce
- 3–4 cups beef broth (adjust for thickness)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt & pepper to taste
- 1 cup cooked white or brown rice
Instructions:
- Brown the meat:
In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain excess fat if needed. - Sauté vegetables:
Add chopped onion, garlic, and bell peppers to the pot. Cook for 5–6 minutes until softened. - Add liquids and seasoning:
Stir in the diced tomatoes, tomato sauce, beef broth, oregano, basil, salt, and pepper. - Simmer:
Bring to a boil, then reduce heat and let simmer for 25–30 minutes to allow the flavors to blend. - Add rice:
Stir in the cooked rice just before serving. If you add it too early, it may absorb too much liquid. - Serve hot:
Garnish with shredded cheese or fresh parsley if desired.
