Zucchini Spice Cake with Cream Cheese Frosting

Moist, tender, and full of warm spice—this zucchini cake is topped with a creamy frosting that makes every bite irresistible!

Ingredients:

2 cups grated zucchini (about 2 medium, excess moisture squeezed out)

1 1/2 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 large eggs

1/2 cup vegetable oil

3/4 cup granulated sugar

1/4 cup brown sugar

1 teaspoon vanilla extract

For the Frosting:

8 oz cream cheese, softened

1/4 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 350°F. Grease a 9×9-inch baking dish.
  2. In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a large bowl, beat eggs, oil, sugars, and vanilla until smooth.
  4. Fold in zucchini. Add dry ingredients and mix just until combined.
  5. Pour into the prepared pan and spread evenly.
  6. Bake for 35–40 minutes or until a toothpick comes out clean. Cool completely.
  7. For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and mix until fluffy.
  8. Frost cooled cake and enjoy!
