Zucchini Spice Cake with Cream Cheese Frosting
Moist, tender, and full of warm spice—this zucchini cake is topped with a creamy frosting that makes every bite irresistible!
Ingredients:
2 cups grated zucchini (about 2 medium, excess moisture squeezed out)
1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 large eggs
1/2 cup vegetable oil
3/4 cup granulated sugar
1/4 cup brown sugar
1 teaspoon vanilla extract
For the Frosting:
8 oz cream cheese, softened
1/4 cup unsalted butter, softened
2 cups powdered sugar
1 teaspoon vanilla extract
Instructions:
- Preheat oven to 350°F. Grease a 9×9-inch baking dish.
- In a medium bowl, whisk flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a large bowl, beat eggs, oil, sugars, and vanilla until smooth.
- Fold in zucchini. Add dry ingredients and mix just until combined.
- Pour into the prepared pan and spread evenly.
- Bake for 35–40 minutes or until a toothpick comes out clean. Cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla and mix until fluffy.
- Frost cooled cake and enjoy!
