Cheese Tortellini with Sausage and Spinach in a Creamy Tomato Sauce
Ingredients:
1 package cheese tortellini (fresh or frozen)
1/2 lb Italian sausage (mild or spicy), casings removed
2 cups baby spinach
1 cup marinara or tomato sauce
1/2 cup heavy cream
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 tbsp olive oil
Salt, pepper, and red pepper flakes to taste
Instructions:
- Boil the tortellini according to the package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
- Add marinara sauce and simmer for 5 minutes.
- Stir in the cream and let it warm through.
- Add spinach and cook until wilted.
- Toss in the tortellini, sprinkle mozzarella and Parmesan over the top, and mix gently.
- Cover and cook for 2-3 minutes until the cheese melts.
- Serve hot with extra cheese or chili flakes on top if desired.
