Baked Pork Chops & Potatoes Gratin
Ingredients:
- 4-6 pork chops (thick cut, bone-in or boneless)
- 4 large potatoes (peeled & thinly sliced)
- 2 cups shredded cheese (cheddar, mozzarella, or a mix)
- 2 cups heavy cream or half-and-half
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp Italian seasoning (or thyme/oregano mix)
- Salt & black pepper (to taste)
- Fresh parsley (chopped, for garnish)
Instructions:
- Preheat Oven:
Preheat your oven to 200°C (400°F). - Prepare Potatoes:
Peel and thinly slice the potatoes. Toss them in a bowl with a bit of salt, pepper, and half the minced garlic. - Sear Pork Chops:
Heat olive oil in a skillet over medium-high heat. Season pork chops with salt, pepper, paprika, and Italian seasoning. Sear the chops for about 2-3 minutes per side until golden brown. (They will finish cooking in the oven.) - Assemble the Dish:
In a greased baking dish, arrange the potato slices in an even layer. Pour the cream over the potatoes and sprinkle half of the shredded cheese. - Add Pork Chops:
Place the seared pork chops on top of the potatoes. Sprinkle remaining cheese over the chops. - Bake:
Cover with foil and bake for 25-30 minutes. Remove the foil and bake uncovered for an additional 10-15 minutes, until the top is golden and bubbly and the pork reaches an internal temp of 63°C (145°F). - Garnish & Serve:
Sprinkle freshly chopped parsley on top before serving.
Optional Add-ons:
- Add caramelized onions between the potato layers.
- For extra creaminess, mix a bit of grated parmesan into the cream.
- You can also add a pinch of cayenne for some heat.
