Baked Spinach and Mushroom Quesadillas

INGREDIENTS:

  • 4 large flour tortillas
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Sour cream and salsa for serving (optional) INSTRUCTIONS:
  1. Preheat your oven to 400°F (200°C).
  2. In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes. Add the chopped spinach and cook until wilted.
  3. Remove the skillet from the heat and stir in the garlic powder, along with salt and pepper to taste.
  4. Place one tortilla in a baking dish. Sprinkle a layer of shredded cheese on top, then add the spinach and mushroom mixture. Finish with another layer of cheese.
  5. Place a second tortilla on top. If desired, repeat the layering process with additional tortillas, cheese, and filling.
  6. Bake in the preheated oven for 15-20 minutes or until the tortillas are crispy and the cheese is melted.
  7. Once done, cut the quesadillas into wedges and serve with sour cream and salsa on the side, if you like.
