INGREDIENTS:
- 4 large flour tortillas
- 2 cups fresh spinach, chopped
- 1 cup mushrooms, sliced
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Sour cream and salsa for serving (optional) INSTRUCTIONS:
- Preheat your oven to 400°F (200°C).
- In a skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook until softened, about 5 minutes. Add the chopped spinach and cook until wilted.
- Remove the skillet from the heat and stir in the garlic powder, along with salt and pepper to taste.
- Place one tortilla in a baking dish. Sprinkle a layer of shredded cheese on top, then add the spinach and mushroom mixture. Finish with another layer of cheese.
- Place a second tortilla on top. If desired, repeat the layering process with additional tortillas, cheese, and filling.
- Bake in the preheated oven for 15-20 minutes or until the tortillas are crispy and the cheese is melted.
- Once done, cut the quesadillas into wedges and serve with sour cream and salsa on the side, if you like.
