Shrimp Scampi Recipe (Serves 4)
Ingredients:
- 1 lb (450g) large shrimp, peeled and deveined
- Salt and freshly ground black pepper, to taste
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/2 cup dry white wine (or chicken broth as a substitute)
- 1/4 tsp red pepper flakes (optional, for heat)
- 1/4 cup freshly squeezed lemon juice
- 1/4 cup chopped fresh parsley
- 8 oz (225g) linguine or spaghetti, cooked al dente
- Lemon wedges (for garnish)
Instructions:
- Cook the Pasta:
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain and set aside.
- Sauté the Shrimp:
- Season the shrimp with salt and pepper.
- In a large skillet, heat olive oil and 2 tbsp of butter over medium-high heat.
- Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and opaque. Remove the shrimp and set aside.
- Make the Sauce:
- In the same skillet, lower the heat to medium and add the remaining 1 tbsp of butter.
- Sauté the garlic for about 30 seconds until fragrant.
- Add the white wine (or chicken broth) and red pepper flakes. Let it simmer for 2-3 minutes until slightly reduced.
- Stir in the lemon juice and parsley.
- Combine:
- Return the shrimp to the skillet and toss to coat in the sauce.
- Add the cooked pasta and toss everything together. If needed, use the reserved pasta water to loosen the sauce and coat the pasta evenly.
- Serve:
- Serve immediately, garnished with fresh parsley and lemon wedges for an extra burst of flavor.
