Recipe for Golden Veggie Rolls:

Ingredients:

  • 2 large potatoes (boiled and mashed)
  • 1 cup finely chopped green onions (or spring onions)
  • 1/2 cup grated carrots (optional)
  • 1/4 cup chopped parsley or cilantro
  • 1/2 cup grated cheese (optional, for extra richness)
  • 1/2 tsp black pepper
  • 1/2 tsp chili flakes (optional, for a spicy kick)
  • 1 tsp garlic powder or minced garlic
  • 1 tsp salt (adjust to taste)
  • 1/2 cup all-purpose flour (for binding)
  • 1 egg (for binding, optional)
  • 1 cup breadcrumbs (for coating)
  • 2 tbsp oil (for shallow frying)

Instructions:

  1. Prepare the Filling:
    • In a mixing bowl, combine the mashed potatoes, green onions, grated carrots (if using), parsley or cilantro, and cheese.
    • Add black pepper, chili flakes, garlic powder, and salt. Mix well until evenly combined.
  2. Shape the Rolls:
    • Add the flour to the potato mixture for binding. If needed, add a little egg or water to make the mixture pliable.
    • Take a small portion of the mixture and shape it into a log or cylinder. Repeat for the remaining mixture.
  3. Coat the Rolls:
    • Roll each shaped piece in breadcrumbs to coat it evenly.
  4. Cook the Rolls:
    • Heat oil in a frying pan over medium heat.
    • Place the rolls in the pan and shallow fry them until golden brown on all sides. Turn occasionally for even cooking.
  5. Serve:
    • Remove the rolls and place them on a paper towel to drain excess oil.
    • Serve hot with ketchup, yogurt dip, or any sauce of your choice.
