Recipe for Golden Veggie Rolls:
Ingredients:
- 2 large potatoes (boiled and mashed)
- 1 cup finely chopped green onions (or spring onions)
- 1/2 cup grated carrots (optional)
- 1/4 cup chopped parsley or cilantro
- 1/2 cup grated cheese (optional, for extra richness)
- 1/2 tsp black pepper
- 1/2 tsp chili flakes (optional, for a spicy kick)
- 1 tsp garlic powder or minced garlic
- 1 tsp salt (adjust to taste)
- 1/2 cup all-purpose flour (for binding)
- 1 egg (for binding, optional)
- 1 cup breadcrumbs (for coating)
- 2 tbsp oil (for shallow frying)
Instructions:
- Prepare the Filling:
- In a mixing bowl, combine the mashed potatoes, green onions, grated carrots (if using), parsley or cilantro, and cheese.
- Add black pepper, chili flakes, garlic powder, and salt. Mix well until evenly combined.
- Shape the Rolls:
- Add the flour to the potato mixture for binding. If needed, add a little egg or water to make the mixture pliable.
- Take a small portion of the mixture and shape it into a log or cylinder. Repeat for the remaining mixture.
- Coat the Rolls:
- Roll each shaped piece in breadcrumbs to coat it evenly.
- Cook the Rolls:
- Heat oil in a frying pan over medium heat.
- Place the rolls in the pan and shallow fry them until golden brown on all sides. Turn occasionally for even cooking.
- Serve:
- Remove the rolls and place them on a paper towel to drain excess oil.
- Serve hot with ketchup, yogurt dip, or any sauce of your choice.
Tip:
For a healthier option, bake these rolls at 375°F (190°C) for 20–25 minutes or air fry them until crispy!
