Beef Stroganoff Recipe (Serves 4)
INGREDIENTS:
- 1 lb (450g) beef sirloin or tenderloin, sliced into thin strips
- 2 tbsp all-purpose flour (optional, for thickening)
- 2 tbsp olive oil or unsalted butter
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 oz (225g) cremini or button mushrooms, sliced
- 1 cup beef broth
- 1 cup sour cream (or heavy cream for a richer taste)
- 1 tbsp Dijon mustard
- 1 tsp Worcestershire sauce
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
- 12 oz (340g) egg noodles, cooked and drained
Instructions:
- Prepare the Beef:
- Season the beef strips with salt and pepper.
- Lightly coat the strips with flour if you prefer a thicker sauce.
- Cook the Beef:
- Heat 1 tbsp of oil or butter in a large skillet over medium-high heat.
- Sear the beef strips in batches to avoid overcrowding. Cook for about 1-2 minutes per side until browned. Remove and set aside.
- Cook the Vegetables:
- In the same skillet, add the remaining oil or butter.
- Sauté the onions for 3-4 minutes until soft.
- Add the mushrooms and garlic, cooking for another 4-5 minutes until browned and fragrant.
- Make the Sauce:
- Pour in the beef broth and deglaze the skillet, scraping up any browned bits from the bottom.
- Stir in the Dijon mustard and Worcestershire sauce.
- Reduce the heat to low and mix in the sour cream until smooth. Do not let it boil to avoid curdling.
- Combine:
- Return the cooked beef to the skillet and simmer for 2-3 minutes until heated through and coated in the sauce.
- Adjust seasoning with salt and pepper as needed.
- Serve:
- Spoon the Beef Stroganoff over cooked egg noodles.
- Garnish with fresh parsley and serve warm.
