INGREDIENTS:

  • 1 lb (450g) beef sirloin or tenderloin, sliced into thin strips
  • 2 tbsp all-purpose flour (optional, for thickening)
  • 2 tbsp olive oil or unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225g) cremini or button mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream (or heavy cream for a richer taste)
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 12 oz (340g) egg noodles, cooked and drained

Instructions:

  1. Prepare the Beef:
    • Season the beef strips with salt and pepper.
    • Lightly coat the strips with flour if you prefer a thicker sauce.
  2. Cook the Beef:
    • Heat 1 tbsp of oil or butter in a large skillet over medium-high heat.
    • Sear the beef strips in batches to avoid overcrowding. Cook for about 1-2 minutes per side until browned. Remove and set aside.
  3. Cook the Vegetables:
    • In the same skillet, add the remaining oil or butter.
    • Sauté the onions for 3-4 minutes until soft.
    • Add the mushrooms and garlic, cooking for another 4-5 minutes until browned and fragrant.
  4. Make the Sauce:
    • Pour in the beef broth and deglaze the skillet, scraping up any browned bits from the bottom.
    • Stir in the Dijon mustard and Worcestershire sauce.
    • Reduce the heat to low and mix in the sour cream until smooth. Do not let it boil to avoid curdling.
  5. Combine:
    • Return the cooked beef to the skillet and simmer for 2-3 minutes until heated through and coated in the sauce.
    • Adjust seasoning with salt and pepper as needed.
  6. Serve:
    • Spoon the Beef Stroganoff over cooked egg noodles.
    • Garnish with fresh parsley and serve warm.
