Zucchini Noodles in Lemon Butter with Juicy Cheesy Garlic Burgers

Ingredients for 4 servings

1 1/4 lb (650g) lean minced beef
5 cloves of garlic, finely chopped
1/2 cup of fresh parsley, chopped (keep some for garnish)
1 teaspoon of beef bouillon cube, crumbled
Optional: Crushed red chili pepper flakes
1 tablespoon of hamburger seasoning (for example, Mc Cormick’s Grill Mates)
4 medium-sized zucchinis, either spiralized or julienned
4 slices of cheese (cheddar, mozzarella, provolone, etc.)
4 tablespoons of butter, divided
1 tablespoon of hot sauce (for example, Sriracha)
Salt and freshly ground pepper
1 teaspoon of Italian seasoning
Juice of 1/2 lemon, plus additional lemon slices for garnish

In a medium bowl, combine the minced beef, half of the chopped garlic, the crumbled bouillon cube, parsley, hamburger seasoning, and red chili pepper flakes (if using). Mix until just combined.
Form the mixture into 8 equal patties. Place a slice of cheese on top of 4 of the patties, then top with the remaining patties to form a “sandwich”.


Heat 2 tablespoons of butter in a large skillet over medium-high heat. Cook the patties for 5 to 6 minutes on each side, or until done to your liking. Baste the patties with the butter and juices in the pan. Remove the patties from the skillet and set aside.


In the same skillet, melt the remaining 2 tablespoons of butter. Add the remaining garlic, lemon juice, hot sauce, Italian seasoning, and red chili pepper flakes (if using).


Stir in the remaining parsley, then add the zucchini noodles. Toss for 2 to 3 minutes to cook. If the zucchini releases too much water, let the juices reduce for a minute. Move the zucchini to one side of the skillet and return the patties to the pan to reheat for a minute or two.


Serve the cheesy garlic burgers with the lemon butter zucchini noodles immediately, garnished with a lemon slice.
