Avocado Chicken Salad Lettuce Wraps
These wraps are great for a light lunch or a refreshing dinner. They’re also low in carbs, thanks to the lettuce wraps.
Ingredients:
For the Avocado Chicken Salad:

  • 2 cooked chicken breasts, shredded or diced
  • 2 ripe avocados, peeled and dice
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup cherry tomatoes, halved
  • 1 tablespoon lime juice (for flavor and to prevent avocado from browning)
  • Salt and pepper to taste
    For the Wraps:
  • Romaine lettuce or butter lettuce leaves, washed and dried (as the wraps)
  • Crumbled feta or goat cheese for extra flavor (optional)
    Instructions:
  1. If you haven’t already cooked the chicken, you can poach, grill, or bake the chicken breasts until fully cooked.
  2. Let them cool and shred or dice them into bite-sized pieces.
  3. In a large bowl, combine the cooked chicken, diced avocados, red onion, cilantro, and cherry tomatoes.
  4. Add the lime juice, and season the salad mixture with salt and pepper.
  5. Gently toss to combine, ensuring that the avocado doesn’t get too mashed.
  6. Take a lettuce leaf and spoon a portion of the avocado chicken salad onto the center.
  7. You can sprinkle some cheese if you’re using it.
  8. Fold the lettuce leaf around the filling and serve.
